Whether on the terrace under the mulberry plane trees or in the dining room with country-style decor, Le Cercle Guiraud invites you to discover a relaxed signature freely inspired by Sauternes and South Gironde.
Led by Chef Yoann Amado, who worked in the Éric Fréchon’s Michelin-starred team, the cuisine at Le Cercle Guiraud reinterprets the fundamentals of French gastronomy with freshness and emancipation, boldness, gourmandise and elegance.
Immersion in the terroir of South Gironde
Asparagus, caviar, oysters, truffles, foie gras, fruit, and vegetables bathed in sunshine on the land side and sea breezes on the sea side: Sauternes and South Gironde are a vast stage for expression.
Here, pigeon grilled with vine shoots is immerged in a spicy sauce, ginger taquins sea bream and beef is wrapped in a veil of fat. Purity and audacity, elegance and frank tastes, Chef Yoann Amado draws inspiration from the seasons and the diversity of the Aquitaine terroir, for an exciting cuisine with gourmet depths.

In the glasses, Denis Verneau, Meilleur Ouvrier de France Sommelier (Best Sommelier in France), has slipped in a selection of French wines produced by artisans defending a virtuous winegrowing.
With its selection of emblematic appellations and houses, as well as more confidential labels, Bordeaux remains an anchor, and we are delighted to discover the renewal of Sauternes. But the menu also invites you to take a tour of France’s vineyards, where terroir and passion make the best wines.
